The scent of Strawberry Gum conjures up scrumptious memories of lollies and bubble gum! The fruity undertones of this native spice make it a wonderful addition to coffee as a tantalising brew. Sweet and slightly acidic like balsamic vinegar, with fruity undertones that have shades of cinnamon, strawberry and passionfruit.
Strawberry Gum is a medium-sized tree, which grows in the Northern Tablelands of New South Wales.
The indigenous Australians who passed through the Northern Tablelands would often chew on the leaves of the Strawberry Gum for their sweet berry flavour. They would also moisten the leaves and lay them over a fire to release their fragrant oils to calm stomach problems.
This bush tucker gem has a host of health benefits, which include antioxidant, anti-fungal and antibiotic properties. It has been shown to help balance the microflora of the gut.
TASMANIAN MOUNTAIN PEPPERBERRY
Mountain Pepper is a native species which grows in cool climate forests of southern New South Wales, Victoria and Tasmania. With many health benefits, it is high in antioxidants. Antioxidants have been linked to preventing or delaying cancer, diabetes and Alzheimer’s, autoimmune and cardiovascular diseases. It also contains Vitamin E, lutein, zinc, magnesium and calcium.
Mountain Pepper Leaf has a strong earthy, spicy flavour. The pepper berry is known for its ‘hot’ flavour due to the polygodial properties. The initial taste is fruity and floral, followed by a spicy mild pepper flavour.
The use of Mountain Pepperberry together with Strawberry Gum defines different! Using either flavour enhancer on their own and the coffee is flat and bitter. Combine the two and magic happens with a whole raft of other flavours emerging to complement the bold coffee flavours.
